MONARCH 9 CAFE

Here at Monarch 9 we want to produce reasonably priced authentic Vietnamese food, made with traditional ingredients. All Monarch 9 dishes are prepared the way the Le family has been cooking at home for generations. We are a family-owned restaurant and the motivation behind our food is Cuc Le (who is the mother and aunt of the owners of Monarch 9).  She loves to cook, but enjoys watching people eat her food even more. Cuc Le has been cooking for our entire family in Vietnam and continues here in America since 2000. She is currently battling cancer and our restaurant is a tribute to her and the legacy of her delicious recipes. We hope that you fall in love with her cooking as much as we have.

& why people love it
Pho is our specialty and we make it fresh every day. We simmer our pho broth for at least 6 hours before we serve it to our customers. We want to make sure our Pho is packed with all the flavors of our fresh ingredients. We do not use pho bouillons nor MSG. Our broth gets it’s amazing flavor from simmering fresh daikon, toasted garlic cloves, charred white onions, whole star anise pods, cinnamon sticks, fresh ginger root, black peppercorns, sea salt, rock sugar and fish sauce (we use seaweed as a substitution for fish sauce in our Vegan Pho broth.

In our Beef Pho broth we use Beef Stock and our signature marinated Oxtail (after the oxtail is braised for 6 hours we pull the meat off and stir fry it in our signature dish “Oxtail Fried Rice”). We also top our pho with thin slices of filet mignon which is cooked pink by pouring our boiling Pho broth into the bowl.

Our Chicken Pho broth is only made with fresh, never frozen, whole free range chickens. We never buy chicken from major meat distributors because they are pumped full of chemicals and antibiotics. We stuff our free range chickens with fresh ginger root, minced garlic and lemongrass. After simmering for 1 hour, we take out the cooked chicken and pull the meat from the bones. The meat is later used for the pho. The chicken bones are thrown back into the broth to simmer for another 5 hours.

Our Vegan Pho broth is made from scratch only using the following fresh ingredients: fresh daikon, red apples, Asian pears, whole star anise pods, toasted ginger root, charred white onions, cinnamon sticks, garlic cloves, black peppercorns, coriander seeds, cardamom, cloves, fennel seeds, sea salt, rock sugar and seaweed. We use sliced shitake mushrooms and tofu as protein. Our Vegan pho is garnished with roasted seaweed, jalapenos, bean sprouts, basil and lime. Our Vegan broth is fresh, healthy, loaded with vitamins and nutrients but most importantly it is delicious.

Our process is lengthy and requires many steps but this is how our family has been making pho for generations. We refuse to use MSG to speed up the process. Our pho is healthy and packed with vitamins and nutrients. We are confident that our customers can taste the difference.
